White Peony "Bai Mudan" White Tea

  • This tea is of David Lee Hoffman's -- The Phoenix Collection.
  • This White Peony, "Bai Mudan," has become a favorite tea of mine. It's filled with silver buds that have dark and light green leaves. White Peony is often very subtle and clean in taste. This White Peony is more rounded out, it has heavier sweetness, and there's noticable hints of melon and honey. This tea is nicely distinct, and makes a great everyday tea. The leaves are quite aromatic after steeping, and this tea holds up well with multiple infusions. You can't beat the price! This is a really good tea at a great price.
  • Gaiwan Method
Using a 4 ounce Gaiwan, I recommend 3 grams of tea: first do a quick pre-steep rinse to ensure that the leaves infuse evenly, and then steep for about 30 seconds, gradually increasing the steeping length after each infusion. I find I can get three to five good steepings out 3 grams.
