  • This Phoenix Mountain Oolong is high mountain grown. It's wonderfully sweet and handles several infusions quite well. This tea is a great Oolong that is easy to enjoy whenever you are looking for something with a simple sweetness and subtle complexity.
  • Gaiwan Method
    Using a 4 ounce Gaiwan, I recommend 3 grams of tea, at 185 temperature. First, do a quick pre-steep rinse to ensure that the leaves infuse evenly and then steep for about 30 seconds. From there make each additional infusion about 5 seconds longer than the previous one. Generally, you'll be able to yield 5 to 8 rounds.
